Each of the 43 chapters is, in essence, a review of a given topic, with primary emphasis on nutritional principles rather than dietetics.Three new chapters have been added, two under "Normal Nutrition" and one under "Nutrition in Disease." These are (1) "Naturally Occurring Toxic Foods" by Mickelsen and Yang; (2) "Evaluation of Nutrition in Population Groups" by Pearson; and (3) "Nutrition in Brain Function" by Coursin. All are timely, well-written additions to the book.The rest of the volume has been revised extensively, and 12 new authors are listed.
