The author has selected his material carefully, reminding the reader that some phases of the early experimental work in nutritional deficiencies are not entirely accurate because multiple deficiencies were unknowingly being studied.The book is divided into six parts, each one dealing with certain phases and groups of deficiencies. It begins with a general discussion of dietary deficiencies, followed by a survey of deficiencies in each of the essential elements. In this part, physiologic and pathologic effects of elemental deficiencies are described. Much of the data is derived from animal experimentation, and because deficiencies of single elements are not common in human beings these are not described extensively except in the instances of potassium, sodium, iron and iodine.
